How much iron do you actually get?
- Test method:
Dissolve 60g of miso in 600ml of water (assumed to be 4 bowls), heat for 5 minutes after boiling, and let stand for 120 minutes.
- Results:
Results: We found that 39mg more iron was dissolved than in a glass pot.
This is about 9.7 mg per cup of miso soup, or more than 90% of the recommended daily intake of iron during menstruation, when iron is in short supply.
In addition to the high iron content, approximately 25% of the extracted iron was found to be divalent iron. Bivalent iron is easier for the body to incorporate than the trivalent iron found in foods.
