Tofu-Loaded!! Natto Green Onion Pork Dumplings

version of the popular okonomiyaki recipe from TSUMAMO, this one is the natto, green onion, and pork dumpling version! Simple ingredients yet a hearty dish. With tofu in it, the texture turns fluffy. Perfect for days when you want to eat a lot but not feel too heavy.

Ingredients

1/2 block firm tofu (200g)
150g shredded cabbage
2 tablespoons potato starch
1/2 teaspoon dashi stock powder
3 large eggs
1/4 teaspoon salt
1 pack natto (mixed with accompanying sauce)
Chopped green onions, as needed
6 slices pork belly
Okonomiyaki sauce, as needed
Mayonnaise, as needed
Bonito flakes, as needed
Chopped green onions, as needed

Method/Instructions

  • Heat the tofu in the microwave to dehydrate, then crush it by hand. Mix shredded cabbage with potato starch and seasonings thoroughly, then combine with beaten eggs, tofu, chopped green onions, and natto.
  • In a frying pan, pour oil and the batter, place pork slices, steam-cook, then grill on both sides. Top with sauce as per preference.
